In this evaluation, we used calcium propionate (CP), potassium sorbate (PS), citric acid (CA), lactic acid (LA), assessing their inhibitory capacity alone and in blends with fumaric acid on three mold species and two bacteria, measuring the growth radius and calculating the percentage of inhibition (% I).
