Fumaric acid and calcium fumarate, the best allies for imparting flavor and pH regulation in your formulations.

ADDIMENTUM has been one of the most significant manufacturers of fumaric acid in Latin America for over 35 years. Currently, most powdered soft drink formulations contain fumaric acid as one of the main acidulants, as well as in most ready-to-drink beverages with grape or blueberry flavor.

Due to its two acidity constants, which are higher than those of other acidulants used in the food industry, fumaric acid allows for better pH regulation in formulations, provides greater buffering capacity, and requires a dosage of 2 out of the 3 parts required if citric acid were to be used.

In fruit juices, Fumaric Acid is used in combination with citric acid to reduce the proportion of preservatives such as sorbates, propionates, and benzoates due to its antimicrobial capacity against both fungi and bacteria.

Fumaric Acid has a strong and astringent taste compared to citric acid, making it longer-lasting in mouth perception as time goes by.

If an acidity regulator is required in the formulation to increase stability and buffering capacity, the use of calcium fumarate (the conjugate salt of fumaric acid) in synergy with both allows for a reduction in raw materials in the formulation and enhances the flavors.

Fumaric acid and calcium fumarate are non-hygroscopic, allowing them to be used in any type of packaging, without other raw materials in the formulation absorbing moisture or easily interacting with each other in the absence of a carrier such as water.

The solution of fumaric acid and calcium fumarate offered by ADDIMENTUM can be soluble in cold water for this market segment. Additionally, it is available in various particle sizes, ensuring the required flow and mixing properties in the beverage production process.
